Zacuscă de vinete, preparată rapid

Ingrediente: 2 kg ceapă, 3 kg ardei gogoşar, 3 kg vinete (coapte), 2 kg roşii proaspete, 1 l ulei, sare de mare.

Mod de preparare: Ceapa şi ardeii se rad pe răzătoarea mare. Se pune ulei la încins, se adaugă ceapa şi se lasă cinci minute, apoi se adaugă şi ardeiul. Se fierbe 30 de minute la foc mic, amestecând suficient. Se adaugă apoi vinetele tocate şi se lasă să fiarbă. Roşiile se rad şi se adaugă la compoziţie, care se fierbe în continuare. În momentul în care a ieşit uleiul deasupra se adaugă sare după gust. Se mai lasă cinci minute, apoi se pune fierbinte în borcane, care se capsează şi se pun la fiert în bain-marie. Se serveşte rece.
